COBB-led together...

This is just a quick share, because I have a bubble bath waiting for me, and a glass of wine to go with it. It has been a ridiculously full couple of weeks since Easter, and I've been away more than I've been home. Hotel beds are fine, and restaurants are a fun diversion, but I'm glad to see the rest of my April looking more sane (for me).

Ok, I need to show you this Cobb salad, the one I said I'd make after Easter, and then I did but I didn't share.

Oh, so happy in my mouth!

I had leftover smoked Easter turkey, some pretty easter eggs, bacon, avocado, tomato, bleu cheese... all over lettuce, with a drizzle of lemon juice/olive oil/dijon and salt and pepper. No real method to this madness - I just made it look good, and it tasted just right. This was enough for two meals.

Then, there was THIS salad for a late supper the other week. The brightness of the flavours made me feel certain that Spring is indeed here at last.

On a bed of lovely curly lettuce, I layered a chopped Bartlett pear (perfectly ripe and juicy), some crispy bacon, goat cheese, and a goodly sized handful of steamed asparagus. I whisked together lemon juice and olive oil with some salt and pepper, and drizzled that on top. I could eat like this EVERY DAY. So lovely.
